Eileen graduated from the University of the South in 2013 with a Bachelor of Science Degree in Ecology and obtained her Master's Degree in Agribusiness from the University of Georgia in 2019. Eileen went on to become a Certified Permaculture Designer from the Ashevillage Institute, a Master Gardener of TN in Davidson County, a Certified Holistic Herbalist from the Blue Ridge School of Herbal Medicine, a Nutritional Therapy Practitioner, and a Certified RESTART Instructor. Eileen is also on the Board of Advisors for the convent!
